Starters and sharers: Fried calamari, "64-degree" perfect egg in tchoutchouka style, tuna tataki, creamy burrata, and corn tacos.
Fresh side: Special Cabanon, pasta salad or chickpeas with cumin.
Raw side: French beef tartare with a knife or smoked duck breast with pine nuts, local catch maigre ceviche.
Sea side: Grilled octopus tentacles, low-temperature cooked cod, Mediterranean maigre fillet, whole sea bass "butterflied."
Land side: French farm chicken, French beef burger, and beef flank steak.
Pasta side: Pasta with shelled prawns in their head juice and lobster oil.
